This week in real time:

There were no family reunions here from Sunday-Thursday so the hosts had some friends visiting. We had a fun time hanging out with all of them, and learned a new card game called Skull King that was really fun! Also, the neighboring property has some really cute cows. Luna and Xirco tried to go through the fence to meet the cows right after this photo.

We joined in on multiple workouts with our hosts and friends this week-it made me feel like I was going to a group exercise class again which I miss! Our hosts go to a park in the next town to play ultimate frisbee on Tuesdays. This week, Dylan played and I got Xirco socialized with some other dog friends! The views from the park are amazing!

We also got to go on what our hosts call the "easy float" section of the Salmon River. It's about a 10 minute drive from the Ranch, and takes about 1-1.5 hours to float depending on the current. Luna and Dylan proved that they are still a pro paddle board duo, making it through many mini rapid sections standing. Xirco is not a fan of water, so we decided not to force him into a long water adventure...this time.

This week was also exciting because we took our inaugural truck camping trip in Idaho! Our plan for the summer has been to take advantage of the truck cap for some mini camping adventures to enjoy the beautiful nature around us. We finally got the truck bed cleared out this week for sleeping. Last night we found a free campsite right on the river, and promptly froze our butts off...Although the highs are in the 80s most days, it still drops to the 40s at night. We forgot that it would be much colder in the truck than we are used to in the trailer. Despite a rough sleep, we still made the most of our Friday by going on a really fun hike that had some more amazing views!

What we're eating this week:

An old staple recipe of ours was this one pan jerk chicken and coconut rice. However, these days I try to only cook rice in the instant pot (I am notoriously bad at cooking rice on the stove), so I found an instant pot version and it has been awesome! Instant pot jerk chicken and coconut rice ALSO made the best corn, peach, and feta salad - summer in a bowl!
