This week in real time:

Another week in Idaho, but this one was full of surprises! On Monday a Medevac helicopter landed at the ranch super close to the RV. Cool experience to see the helicopter land so close, but sad for the patient.

This week our garden has shown signs of life, and we are hoping to see it continue to grow. We also had the opportunity to go rafting on the Salmon River with our host family. This was my first real white water experience, and we even went through a few class 3 rapids. We had a blast, no one fell out, and the cold water was refreshing on a warm sunny day!

The big event of the week was obviously the 4th of July. We woke up to rain but it cleared in time for the parade in the small "downtown" of Clayton, ID!

Since our pups (mostly Luna) are not big firework fans, we decided to go on a hike to tire everyone out before the noisy evening activities. Dylan had gone on a run/hike up this mountain before and wanted me to see the views from the top. It was a steep climb, and as we got higher up we noticed some storm clouds forming again. We decided to turn around after 2.7 miles up the mountain and were able to run down pretty quickly to the safety of our truck before the skies opened up. Safe to say we were all tired after that!

What we're eating this week:

We didn't cook anything super exciting this week, but I did cook sweet potatoes in the instant pot for the first time! The instant pot continues to impress us for cooking big batches of rice, quinoa-and now sweet potatoes-quickly! IP Sweet potato recipe
